Servings: 2 - 4 kids for a snack or lunch.
- ½ red capsicum (bell pepper)
- ½ cucumber
- 2 medium ish carrots
- 2 medium ish celery sticks
- ¼ cup ish sultanas
- ¼ cup ish pretzels
- ¼ packet Plain water crackers
- ¼ packet BBQ rice crackers
- ½ cup ish hummus
- 1 medium wedge (150gmsish) tasty cheese
- ½ cup ish strawberries
- ½ cup ish blueberries
- ½ cup ish cherry tomatoes
- ¼ cup ish Cashews
- ¼ cup ish Roasted almonds
- ¼ cup ish pumpkin seeds (pepita seeds)
- ¼ cup ish Peanuts
NB The exact amount you put in will vary depending on the size of your containers. You want to fill them up, without being so full that you can't close the lid properly. Worth testing at home before snaping on the lid.
Wash and dry the veggies. Slice them into finger food-sized sticks and add to different compartments.
Slice the cherry tomatoes in half if serving to young children.
Wash and dry the fruit, slicing the larger pieces such as strawberries in half if needed.
Cut the cheese into bite-size pieces.
Put the hummus into a sealed container (do not put it directly into the compartment, the lids don't usually seal well enough and you will end up with dip everywhere!)
Add the nuts, seeds, pretzels and dried fruit to the other compartments, snap on the lid and you're done!
Mix this board up with vegies, fruit and ingredients your kids like. Throw in some new foods you are trying to get them to try, you never know what they might eat!
Storage:
Best eaten on the days it's made, or the day after it is stored flat in the fridge for maximum freshness.
